I love making pie because every pie is a reminder of how far I’ve come with baking. I used to struggle making crust and would make pie after pie. It took about a year of practice to get it right, and another year to feel confident that I could get it perfect every single time.

Happy New Year! I made the difficult decision to cancel my holiday travels. So I stress baked!

I’ve been eyeing this cake from @foodandwine for a couple years now that inspired this one. Theirs was a chocolate blood orange cassata cake with ricotta filling. I changed it up a bit. The cake is chocolate with a grapefruit Italian meringue buttercream, grapefruit curd filling, and chocolate ganache glaze. It turned out good but I will not be posting a recipe because there are some things I’d like to tweak. But if you gotta know how it’s made DM me and I’ll send you the recipes I used!

I set off to find a cookie that embodied the elements of a peanut butter blossom but was easier to eat. Enter the peanut butter ganache thumbprint!

Update: the ganache isn’t cracking for the recently frozen batch and the imprint when stacking isn’t that noticeable!
Now there are trade offs. These don’t ship amazingly well. The ganache won’t melt around, but when you stack cookies it does leave a slight imprint. I’ve always found that the ganache cracks when you freeze these cookies. I don’t really care, but I know these are things that other people might want to know!
