Mandel Bread

This chocolate chip mandel bread is a crowd pleaser. Whenever I make it, it doesn't stick around long. Enjoy!

Ingredients

  • 3 cups (390 g) all-purpose flour
  • 1/4 teaspoon salt
  • 1 teaspoon baking powder
  • 1/2 teaspoon cinnamon
  • 3 eggs, at room temperature
  • 1 cup canola oil
  • 1 cup sugar
  • 1 1/2 teaspoons vanilla
  • 1 1/2 cups chocolate chips

Instructions

  • In a medium bowl, combine flour, salt, baking powder, and cinnamon.
  • In a large bowl, combine eggs, oil, sugar, and vanilla with an electric mixer on medium for 2-3 minutes. Mixture should start to look lighter in color.
  • With the mixer on low, add the flour mixture in two batches, mixing until just combined between batches.
  • Put the batter in a bag or container and refrigerate for 4 hours or overnight.
  • Preheat oven to 350°F. On a single baking sheet, form three 8 x 2 1/2 inch rectangles of dough, about 1 to 1 1/4 inches high. The 3 rectangles will be adjacent to the long ends of the baking sheet and be about (see pictures above).
  • Bake for 25 minutes. Let cool for 10 minutes. Slice at a bias into 1 to 1 1/4 inch pieces.
  • Flip pieces on their side. Bake for another 7 minutes. Let cool on a wire rack.
