Chewy Chocolate Chip Cookies

If I had to choose one dessert to eat for the rest of my life, it would be chocolate chip cookies. No matter what mood I’m in, a chocolate chip cookie will make it better. You can eat them with ice cream and they’re easy to pack with you for a road trip or hiking trip.

Chocolate chip cookies are a classic star dessert.

These cookies in particularly are chewy. I have another recipe for chocolate chip cookies that are crispy. I love both, but chewy is the way to go if you want to experience a classic chocolate chip cookie.

I also love adding oats. It creates a great texture and adds to the chewyness. Of course, you can leave out the oats if you wish.

And I guess….you could add raisins instead of chocolate chips. Even though I shudder at the idea. I can’t tell you how may times I’ve been scarred from happily grabbing a “chocolate” chip cookie to discover it was a raisin cookie. Ugh. But if you really like raisins go for it.

Anyway, these are wonderfully chewy and sure to be a crowd pleaser.

Chewy Chocolate Chip Cookies

The classic chocolate chip cookie.

Ingredients

  • 2 1/2 cups (325 g) flour
  • 2 teaspoons cornstarch
  • 3/4 teaspoon salt
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 3/4 cup (1.5 sticks) unsalted butter, softened to room temperature
  • 1/2 cup granulated sugar
  • 1 cup brown sugar, packed
  • 1 large egg plus 2 egg yolks, at room temperature
  • 2 teaspoons vanilla extract,
  • 2 cups chocolate chips
  • 1 cup oats (optional)

Instructions

  • In a medium bowl, combine flour, cornstarch, salt, baking powder, and baking soda.
  • In a large bowl using an electric mixer, cream butter and sugar together until light and fluffy.
  • Turn the mixer to high, add eggs one at a time. Mix until fully combined, scraping the bottom and sides of the bowl occasionally. Add vanilla extract and mix until combined.
  • Turn the mixer to low, add in the flour mixture in 3 portions. Mix until just combined each time.
  • Stir in chocolate chips and oats.
  • Scoop dough into 1.5 tablespoon portions. Cover or place in airtight container/bag and chill for 2 hours (or overnight). Preheat oven to 350 F. Drop dough portions on a lined baking sheet. Bake for 10-12 minutes.
